The Addams’ Apple from Ted Haigh

2 oz Applejack
1 oz Apple Cider
.025 oz (or 1 tsp) Allspice Dram
2 dashes Orange Bitters

Combine ingredients in iced cocktail shaker
Shake & strain into a pre-chilled cocktail glass
Float a clove on top

Ted Haigh came into our lives without ceremony back in 2007 when 12 Bottle Bar was but a whisper on the breeze.  For fun, David had been moonlighting on the line at a friend’s restaurant, and a colleague there, after learning of our burgeoning passion for classic cocktails, handed him a slim, glossy paperback, saying, “This was under the seat of my car.  Make me one of the drinks in it, and it’s yours.”  The book in David’s hand was Ted ’s Vintage Spirits & Forgotten Cocktails and its opening salutation – “Greetings, cocktail archeologists!” – welcomed us into a world where just the right combination of alcohol and a few other well-chosen ingredients could create a libation that was a transformative experience.  The same sense of transformation could be said of Haigh’s book, which chronicled the history of drink with such devotion and clarity that it altered our view of what a cocktail could – and should – be forever.  Read More…

The Burgess Cocktail – A Ted Haigh Original

In a mixing glass with cracked ice, combine:

1 oz Bols Genever
1/2 oz London dock rum (not a brand, a kind of rum; closest to Navy rum)
1/2 oz Vintage Rye (that’s a brand)
1/2 oz Clement Creole Shrub orange liqueur (rum-based and awesome)
1/2 oz Dolin dry vermouth
1/2 oz Carpano Classico sweet vermouth
2 dashes Angostura
1 dash Peychaud

Stir enthusiastically
Strain into a pre-chilled cocktail glass
Twist both a lemon and orange peel over the surface of the drink and insert
Scream “Give me liberty or give me death!” and consume.

From Vintage Spirits and Forgotten Cocktails

1.5 oz Rittenhouse Rye
1 oz Dry Vermouth
0.75 oz Lemon Juice
0.75 oz Grenadine

Add all ingredients to a mixing glass.
Shake with large ice and strain into a coupe.
Garnish with lemon twist.

The Fred Collins Fiz

From Vintage Spirits and Forgotten Cocktails

2 oz Rittenhouse Rye
0.5 oz Simple Syrup
Juice of 1 Lemon
1 tsp Orange Liqueur
6 oz Lemonade

Add the rye, simple syrup, and lemon juice to a mixing glass.  Shake.
Strain into a large glass half filled with crushed or shaved ice.
Add the Orange Liqueur.
Pour the Lemonade in a collins glass, then pour in the contents of the large glass.

From Vintage Spirits and Forgotten Cocktails

1 oz Remy Martin Cognac
1 oz Pusser’s Rum
0.5 oz Orange Liqueur
Juice of Half a Lemon
1 tsp Apple Juice
0.5 tsp Simple Syrup

Add all ingredients to a mixing glass.
Shake with large ice and strain.
Garnish with a fancy lemon twist.
